New Orleans Fish Recipes: Fish Tacos
Keep it simple and keep it fresh.
What follows are recipes that are designed for only fresh fish, properly cleaned. There are no heavy spices or sauces. Tasting the fresh fish well prepared is the concept.
INGREDIENTS:
- 2 inch cubes of firm fish ( small black drum, redfish, seatrout)
- Egg
- Milk
- Bottle of beer
- Progresso bread crumbs (plain or italian herb)
- Coleslaw
- Asian cerachi hot sauce
- A touch of flour
- Salt
- Pepper
- Cayan Pepper
- Garlic powder
- Tomotoes, selantro, onions
- Black beans
DIRECTIONS:
1. Dry Mix: Mix bread crumbs, flour,salt/pepper, cayan pepper, garlic powder in a large tupperwear container egg batter crack eggs milk and beer in mixing bowl
2. Shake up fish cubes or strips in tupperwear with dry mix
3. Then dip in egg mix
4. Deep fry in peanut oil.
5. Get some coleslaw, season it with some sort of hot sauce, I like asian cerachi hot sauce.
6. Wrap in corn tortillas
7. Garnish with tomotoes, selantro, onions
8. Serve with black beans and cold beer
NOTE: For Mediterranean style use high quality olive oil instead of butter.
ALSO NOTE: Redfish can be substituted for trout.
